Ingredients:
1 lb boneless turkey breast, raw
2 cups celery, chopped
1 cup mushrooms, sliced
2 tablespoons onion, diced
1 teaspoon poultry seasoning
½ teaspoon pepper
½ cup low-sodium chicken broth
½ teaspoon onion powder
½ teaspoon garlic powder
2 teaspoons canola oil
Directions:
1. Preheat oven to 350°F.
2. Place turkey breasts in a medium roasting pan and sprinkle equal amounts of poultry seasoning, black pepper, onion powder, and garlic powder on turkey breasts.
3. Place celery, onions, and sliced mushrooms around turkey breasts.
4. Pour chicken broth and oil (or butter/trans-fat-free margarine) into roasting pan.
5. Roast for 45-60 minutes or until the internal temperature of turkey breasts reaches 170°F. (If cooking turkey breasts with skin on, remove the skin before eating.)
