Ingredients:
6 chicken breast thinly sliced (raw, butterflied) – total weight 27.3 oz ~Yields 18 oz cooked
12 oz non-fat plain Greek yogurt
1 cup (2.54 oz) fresh mushrooms sliced
4 cups (4.24 oz) fresh baby spinach
1/2 teaspoon garlic powder
½ teaspoon pepper
1/2 teaspoon onion powder
2 Tbs. olive oil
1/2 cup chicken broth
8 ounces mozzarella cheese
Directions:
1. In 9×13 pan line chicken in single layer
2. Top the chicken with spinach and then mushrooms and Sprinkle with seasonings.
3. Whisk greek yogurt with oil and broth and pour over mixture.
4. Lay foil over top of pan but do not seal.
5. Cook at 375 for 20 mins
6. Remove foil and cook uncovered for another 25 mins.
7. Add mozzarella and cook uncovered additional 10 mins.
Yields 6 Servings ~ Per Serving – 1 Lean, 1 Green, 2/3 Condiment, 1 Healthy Fat
