Ingredients:
25 ounces 85-94% lean cooked ground beef
4 Cups (32 oz) Rao’s sauce
2 tsp oregano
3 tsp garlic powder
2 tsp onion powder
4 tbsp reduced fat parmesan cheese
1/2 tsp salt
3 tsp Italian seasoning
1 packet stevia
1 Cup (1.06 oz) spinach
3 Cups 1% cottage cheese
2 eggs, beaten
1 1/3 Cup (5.5 oz) reduced fat mozzarella cheese
Directions:
1. Add 1 tsp oregano, 1 ½ tsp garlic powder, 1 tsp onion powder, 1/2 tsp salt to the ground beef and brown.
2. Set cooked meat aside in a bowl.
3. Cook spinach in pan drippings until spinach is tender. (May add 1-2 T. low sodium
chicken broth if needed to keep from burning.) Set aside spinach.
4. Add meat back to pan.
5. To the pan, add Rao’s sauce, 1 tsp oregano, 1 ½ tsp garlic powder, 1 tsp onion powder,
1 packet stevia
6. In a separate bowl, mix together the eggs, cottage cheese and parmesan cheese with 3 teaspoons Italian seasoning and Layer in a baking dish in this order,
1/2 meat sauce
Then 1/2 cottage cheese mixture
Then 1/2 cup mozzarella
7. Repeat the layers
8. Top with the cooked spinach and the remaining 1/3 cup mozzarella cheese
9. Bake at 375° for 20 minutes, or until cheese is melted
You may brown under the broiler for 2 minutes to sear the top.
Yields 9 Servings ~ Per Serving – 1 Lean, 2 Greens, 3 Condiments
