Ingredients:
1 ½ pounds chicken breast
1 green pepper
¼ cup onion
1 cup celery,
1 cup mixed red, yellow and orange peppers,
2 cups zucchini
¼ cup habanera peppers
4 cups canned diced tomatoes
¼ teaspoon salt
½ teaspoon pepper
1 tablespoon parsley
3 cloves garlic
2 tablespoons lime juice
2 teaspoons cumin
Directions:
1. Cut chicken into cubes and cook until brown.
2. Chop peppers, onion, habanero peppers, celery, salt, pepper, parsley, garlic and cumin add to pot. Sauté with chicken
3. Add tomatoes and lime juice. Simmer for 30 minutes (add a little water if necessary)
4. Stir in chopped zucchini.
5. Simmer about 15 minutes longer.
Yields 6 servings ~ Per Serving – ½ Lean, 3 Greens, 2 1/3 condiments
