Ingredients:
18.75 ounces raw ground beef
1 ¾ cup green peppers (chopped)
3 cups riced cauliflower
2 cups shredded reduced fat Jack cheese
2 ½ cups cans diced tomatoes (drained well)
¼ cup chopped green onion
2 teaspoons Worcestershire sauce
¼ teaspoon salt
½ teaspoon pepper
Directions:
1. Brown ground beef, add onions and peppers until tender.
2. Add in well drained tomatoes and Worcestershire sauce and riced cauliflower.
3. Heat thoroughly.
4. Turn off heat and mix in cheese until melted
Yields 5 Servings ~ Per Serving – 1 Lean, 3 Greens, 1 Condiments
