Ingredients:
8 cups beef broth
1/2 cup scallions chopped
3 cloves garlic minced
2 pounds corned beef (cut as much fat off as possible)
6 1/2 cups sauerkraut (rinse very good)
1/2 teaspoon celery seed
1 teaspoon coriander seeds
1 teaspoon dill seed
1 tablespoon mustard seed
1 1/2 cup plain Greek yogurt
8 oz. reduced fat swiss cheese
Directions:
1. Put all the above ingredients in crock pot; except the Greek yogurt and
swiss cheese which will go in when its almost finished cooking.
2. Cook on low in your crock pot for approximately 7 hours OR on high for 3 1/2 hours.
3. When
its finished before serving add your yogurt and swiss cheese. Divide among 7
bowls evenly.
Note:
Remember to rinse your sauerkraut before adding.
Trim your corned beef very good to get most of the fat off.
Yields 7 servings (each serving is approximately 2 cups)
Per Serving – 1 lean, 2 greens, 2 1/2 condiments
