18 ounces boneless skinless chicken breasts
12 ounces Jennie-O sweet or hot Italian sausage
1 cup chopped leeks
2 cloves minced garlic
1¼ cup low sodium chicken broth
1 can (14.5 ounces) low sodium diced tomatoes
1 tablespoon tomato paste
½ cup no sugar added tomato sauce such as Hunt’s
2 teaspoons Creole seasoning
¼ teaspoon cayenne
1 Bell pepper
1 cup Green onion
1. Place the all ingredients in the crockpot except green onion. Cover and cook on low for 6-8 hours or high for 3 hours.
2. Shred the chicken directly in the crockpot to your desired texture.
3. Top with the green onion.
