Ingredients:
14 oz cooked shrimp
½ cup yellow bell pepper chopped
½ cup red bell pepper chopped
2 tablespoons chopped onions
¼ cup chopped cilantro
4 teaspoons fresh lime juice
4 teaspoons fresh lemon juice & zest of lemon
1 teaspoon ground cumin
1 teaspoon smoked paprika
4 oz avocado
2 tablespoons fat free plain Greek yogurt
¼ teaspoon salt
½ teaspoon pepper
2 cups romaine lettuce
1 cup halved cherry tomatoes
Directions:
1. In a large bowl mix shrimp, peppers, ½ lime juice, lemon juice and zest, cilantro, onion and spices.
2. Once mixed let rest for 30 minutes to marinate.
3. In a small bowl add avocado and mash with fork.
4. Add lime juice, yogurt, salt and pepper and mix well.
5. Serve on Romain lettuce and tomatoes
