Ingredients:
7 ounces raw salmon fillets
½ cup red peppers
½ cup yellow pepper, chopped up
1 tablespoon onion, chopped
½ cup diced tomatoes
½ Teaspoon of tomato paste
½ teaspoon garlic crushed
Non-stick pan spray
1 Teaspoon of lemon juice
1/8 Teaspoon Pepper
1/8 Teaspoon Oregano
1/8 Teaspoon Basil
1/8 Teaspoon soy sauce
Directions:
1. Layout pieces of salmon in baking dish, set aside.
2. Heat olive oil in a skillet and sauté peppers and onions for about 10 min on medium heat.
3. Add in crushed garlic, diced tomatoes, and tomato paste. Let simmer for about 10 more minutes. Season according to your taste with spices, soy sauce and lemon juice.
4. Cover salmon fully with pepper mixture.
5. Bake at 350 for 20 minutes.
