2 cups water
15 oz. firm tofu, cubed
1 cup finely shredded cabbage, lightly steamed
2 scallions, trimmed and sliced, white and green parts separated
⅛ tsp salt (optional)
1 tsp white miso
1. Bring water to a boil in a soup pot, and add the tofu, cabbage and part of the scallions and the salt.
2. Dissolve the miso into the soup and turn off the heat as soon as it reaches a boil.
3. Garnish with greens of the scallions
Yields 1 Serving ~ Per Serving – 1 Lean, 3 Greens, 3 Condiments
