Ingredients:
½ cup diced leeks
½ cup diced celery
2 garlic cloves (minced)
2 teaspoons olive oil
1 teaspoon dried oregano
1 teaspoon dried parsley
½ teaspoon dried thyme
¼ teaspoon salt
1 ½ lbs lean ground beef or turkey
1 cup petite diced tomatoes
2 tablespoons yellow mustard
1 tablespoon Worcestershire Sauce
¼ teaspoon pepper
2 eggs
Cooking spray
4 cups cauliflower
1 ½ tablespoons low-fat cream cheese
Scallions for garnish (optional)
Directions:
1. Preheat oven to 350 degrees
2 Sauté the leeks, celery and garlic in olive oil along with the oregano, parsley, thyme and salt
3. Remove from heat and place in a large mixing bowl
4. Lightly grease a muffin pan and scoop a portion of the meat mixture into each muffin cup
5. Bake at 350 degrees, for 25 minutes or until done (internal temp of 160 degrees)
6. Meanwhile, steam the cauliflower until tender. Mash it with the cream cheese and a dash of salt and pepper
7. Pipe the mashed cauliflower onto a meatloaf muffins and garnish with scallions if desired.
