Ingredients:
25 ounces 85-94% lean cooked ground beef
4 cups (32 oz) Rao’s sauce
2 teaspoons oregano
3 teaspoons garlic powder
2 teaspoons onion powder
4 tablespoons reduced fat parmesan cheese
½ teaspoon salt
3 teaspoons Italian seasoning
1 packet stevia
1 cup (1.06 oz) spinach
3 cups 1% cottage cheese
2 eggs, beaten
1 1/3 Cup (5.5 oz) reduced fat mozzarella cheese
Directions:
1. Add 1 teaspoon oregano, 1 ½ teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon salt to the ground beef and brown.
2. Set cooked meat aside in a bowl.
3. Cook spinach in pan drippings until spinach is tender. (May add 1-2 tablespoons low sodium chicken broth if needed to keep from burning.) Set aside spinach.
4. Add meat back to pan.
5. To the pan, add Rao’s sauce, 1 teaspoon oregano, 1 ½ teaspoons garlic powder, 1 teaspoon onion powder, 1 packet stevia
6. In a separate bowl, mix together the eggs, cottage cheese and parmesan cheese with 3 teaspoons Italian seasoning.
7. Layer in a baking dish in this order, ½ meat sauce, then ½ cottage cheese mixture and finally ½ cup mozzarella
8. Repeat the layers
9. Top with the cooked spinach and the remaining 1/3 cup mozzarella cheese
10. Bake at 375° for 20 minutes, or until cheese is melted
You may brown under the broiler for 2 minutes to sear the top.
Yields 9 Servings ~ Per Serving – 1 Lean, 2 Greens, 3 Condiments
