1 tablespoon lemon
1 clove garlic, minced
2 teaspoons olive oil
1 tablespoon fresh mint leaves
1, 5 oz. lamb chop
1 ½ cups zucchini
salt and pepper to taste
1. Combine lemon juice, garlic, 1 teaspoon oil and mint.
2. Marinate chops in oil mixture for 2 hours or overnight.
3. Transfer from marinade to broiler pan or grill.
4. Place zucchini on the grill and brush with remaining olive oil, turning once.
