Grilled Cajun Catfish
Ingredients:
16 oz raw wild catfish – should yield 14 oz cooked
½ teaspoon thyme leaves
½ teaspoon black pepper
¼ teaspoon cayenne red pepper
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon onion powder
1/8 teaspoon lemon pepper
Directions:
1. Combine seasonings in a small bowl.
2. Sprinkle on both sides of the catfish.
3. Grill 5 minutes on each side or until fish flakes easily. (You can also bake it at 375 degrees for 8 to 12 minutes or until fish flakes easily.)
4. Serve with your favorite Greens and Enjoy
Yields 2 Servings ~ Per Serving – 1 Lean, 2.25 Condiments
