½ cup Raw Asparagus
¾ cup Raw Eggplant
¼ cup Raw Radishes
½ tablespoon Oil, sesame
1 teaspoon Soy Sauce, low sodium
1 teaspoon Vinegar, rice
¼ teaspoon Crushed Red Pepper Flakes
1. Prep the ingredients and set aside: Thinly slice the eggplant and radishes. Chop asparagus into bite-sized pieces.
2. Heat a skillet on medium-high heat and add sesame oil.
3. Add eggplant, radishes, and asparagus along with the soy sauce, rice vinegar, and red pepper flakes. Stir.
4. Sauté until vegetables are tender. Remove from heat and enjoy!
Yields 1 Serving~ Per Serving – 3 Greens, 3 Condiments
