3 cups Baby Spinach
1 cup low-fat plain Greek yogurt (like Fage 2%)
1 cup shredded mozzarella low moisture part skim cheese
¼ cup reduced fat Parmesan cheese
8 ounces diced cooked chicken breast
2 teaspoons garlic powder
1. Preheat oven to 350° F.
2. Steam spinach, then drain any excess water.
3. Combine Greek yogurt, cheese, and garlic powder.
4. Pour half into a baking dish coated with cooking spray.
5. Top with the chicken and spinach, then the remaining cheese mixture.
6. Bake for 45 minutes.
Yields 3 Servings ~ Per Serving -1 Lean, 1 Green, 2 Condiments
