Chicken Soup with Cauliflower Rice
2 ½ cups low sodium chicken broth
6 oz shredded or cubed chicken, cooked
½ cup chopped zucchini
½ cup chopped yellow squash
½ cup cooked cauliflower rice
1/16 teaspoon salt
1/8 teaspoon pepper
2 wedges lite laughing cow cheese
1. Add the broth in pot along with, chicken, zucchini, squash, salt and pepper.
2. Boil and reduce heat to simmer.
3. When veggies are tender, add cooked cauliflower rice and cheese wedges.
