Ingredients:
3 lbs chicken breast (boneless, skinless)
3 Cups of Riced Cauliflower
1 lb shrimp
½ lb sausage, cut into rounds
3 bell pepper, diced
1 onion, diced
3 celery stalks, sliced
4 garlic cloves
2 bay leaves
1 cup frozen okra
6 ounces tomato paste
15 ounces diced tomatoes
1 tablespoon Cajun seasoning
½ teaspoon pepper
½ teaspoon cayenne
½ teaspoon thyme
½ teaspoon oregano
Directions:
1. Combine all ingredients except shrimp in crockpot to cook on low for 6 hours
2. Add shrimp during last 15 minutes
3. Serve over riced cauliflower lightly toasted in a skillet for 5-10 minutes
