½ head cauliflower (1 to 1 ½ lbs.), trimmed and cut into 2-in. florets (about 4 cups florets)
3 ½ tablespoons extra-virgin olive oil
1 teaspoon smoked paprika
2 teaspoons kosher salt, divided
½ teaspoon ground cumin
¼ teaspoon red chile flakes
2 garlic cloves, smashed and peeled
2 tablespoons lemon juice
3 ½ tablespoons well-stirred tahini
1. Combine the cauliflower, just a little water, ½ Tablespoon olive oil ½ teaspoon kosher salt, to a microwave safe dish.
2. Microwave for about 15 minutes – or until softened and darkened in color.
3. Place the cauliflower mixture into a magic bullet, blender, or food processor and blend.
4. Add the tahini, lemon juice, 2 raw garlic cloves, 3 Tablespoon olive oil, and 1 ½ teaspoons kosher salt, paprika, cumin, red chili flakes and blend until mostly smooth.
