head cauliflower (1 to 1 1/2 lbs.), trimmed and cut into 2-in. florets (about 4
3 1/2 tablespoons extra-virgin olive oil
1 tsp. smoked paprika
2 teaspoons kosher salt, divided
1/2 teaspoon ground cumin
1/4 teaspoon red chile flakes
2 garlic cloves, smashed and peeled
2 tbsp. lemon juice
3 1/2 tablespoons well-stirred tahini
Combine the cauliflower, just a little water, 1/2 Tbsp olive oil ½ tsp kosher salt, to a microwave safe dish. Microwave for about 15 minutes – or until softened and darkened in color.
Place the cauliflower mixture into a magic bullet, blender, or food processor and blend. Add the tahini, lemon juice, 2 raw garlic cloves, 3 Tbsp olive oil, and 1.5 tsp kosher salt, paprika, cumin, red chili flakes. Blend until mostly smooth.
