Ingredients:
2 ½ cup cauliflower, cooked and chopped
½ cup celery, chopped
2 hard-boiled egg, chopped
3 tablespoon light mayo
2 teaspoon Dijon mustard
¼ teaspoon salt
¼ teaspoon onion powder
1/8 teaspoon black pepper
2-3 pickle spears, chopped
sprinkle of paprika
Directions:
1. Steam cauliflower until it reaches the same texture as cooked potatoes.
2. Rinse Cauliflower in cold water to cool and pat with paper towel until dry.
3. Chop the cauliflower into small bites.
4. Mix cauliflower into a bowl with celery and eggs: Add mayo, mustard, salt onion power, and pepper. Mix well. Sprinkle with paprika.
5. Chill for 1 hour.
Yields 2 Servings ~ Per Serving – 1/3 Lean, 3 Greens, 2 Condiments, and 1 Healthy Fat
