Ingredients:
4 large free-range eggs (or egg beaters)
2-3 Tablespoon water
3 oz. avocado, lightly mashed
2-3 slices nitrate-free turkey bacon, cooked to your liking (2 oz)
coconut or avocado oil cooking spray
¼ teaspoon salt
¼ teaspoon pepper
Directions:
1. Place a medium nonstick pan over medium heat
2. Place 4 mason Jar lids (centers removed) in pan
3. Lightly spray with cooking spray
4. Very gently crack eggs into the centers of the lids and lightly whisk with a fork to break up the yolk. (best if eggs whites only used)
5. Salt and pepper to taste
6. Pour water around the lids and cover the pan
7. Cook on low heat for about 4-5 minutes, or until the egg is just set
8. Remove lids
9. Gently flip the egg “bun” side onto the plate.
10. Top with mashed avocado and cooked bacon
11. Assemble as shown, and enjoy!
Yields 2 Servings ~ Per Serving – 1 Lean, 1 Healthy Fat, 2 Condiments
